Watermelon Salad

There were so many requests for dishes that were either salads or didn’t require cooking from this post…let’s read some of them…. I read the other requests and I will get to them when I can.

Some ingredients that will go on top, baby red onions, goat cheese, olive oil salt and pepper dressed arugula, sliced mangoes, sliced tomatoes and sprouts.

Slice an 1″ thick rectangular block of watermelon and freeze for 15-30 minutes. You might think this watermelon salad sounds weird but it’s SO GOOD. Use a seedless watermelon though!

To the right, super dense balsamic vinegar, and to the left Campari Soda..something I plan on drinking with this refreshing, cold meal.

Dress the watermelon with olive oil and and that thick balsamic vinegar. Add salt to taste.

Add the sliced mangoes on top, and continue with the Arugula.

Add everything else, the goat cheese should be added last. Here are the rest: tomatoes, sprouts, red onions…You know there are always a few ingredients in a dish that really make it delicious. For this, it would be the goat cheese, and the red onions. Somehow that + the mixture of the balsamic and watermelon just work so well together. I do not like fruit in my salads (like strawberry for example) or things like pineapple and ham pizza, but this just works for me. If you negate the goat cheese, this dish is vegan..but the goat cheese is the best part.




For a drink: Campari Soda with Izze Blackberry soda mixed together on ice with lots of sliced lime.



Since this watermelon was frozen a little, it’ll keep you very cool. This took me less than 10 minutes to make.

Holymoly you’ve outdone yourself doll! I loves me some watermelon salad with balsalmic but have never,ever seen it served this way! So creative, so gorgeously artistic…I don’t even wanna eat it! But drooling from afar! Yummy!

That just totally cooled my hot summer day! The combination of flavors seem perfect.
The only way to possibly make this any better is to soak the watermellon in rum before freezing it.

Growing up in Bulgaria we mostly eat goat (feta) cheese and eating it with watermelon during summer was not uncommon. The added ingredients look like they would make a great meal!

Amazing! I usually like to throw in some mint and lime when I make my variation of this salad, but your version looks simply delicious! Speaking of freezing things, ever considered turning this into an ice pop?

I LOVE watermelon in salads – I have a great salad recipe that combines salmon with the watermelon and some other bits and pieces that is just stunning.
I think the combination of meat and fruit has to be one of my favourite – like pear or apple and pork, mango chicken….
Yum! Have made delicious watermelon salads with roquette, fresh torn mint, cubes of melon, cubes of fetta, black olives and oil + lemon/lime juice dressing. Sticky balsamic would be divine, as would, I think, pomegranate molasses.

This looks so delicious. I’m also not a fan of fruit in my salads. I just cannot stand the idea of strawberries or apples mixing with my lettuce. Eww. But this looks amazing and totally refreshing! Can’t wait to try it.
