Cold Truffles
Truffle ice cream. It doesn’t get much more indulgent than this.

I’ve never seen something so beautiful.


I’m starting the Creme Anglaise here, which is the base for many ice creams. Its a custard base used for desserts, consisting of heavy cream or milk, egg yolks and sugar.

I grate the truffles into the milk, before steeping the milk so the flavor of the truffle truly blossoms.



This was the egg and sugar mixture, that sort of liquified into one compound. I pour it into the chilled bowl, especially designed for ice cream making. This bowl is a separate part you buy that has a double wall and inside it is filled with water. You’re supposed to freeze the bowl so that the water inside becomes frozen and your ice cream can start to chill with the mixture spins.

I also add the truffle/milk mixture. This smell, the smell of the heat coming from the milk and truffles infusing, should be made into a perfume called “Milk & Truffles”.


At this point, the ice cream is ready to be spooned into its compartment.

You can see its still very soft, which is why it needs to be frozen again. You could eat it as is but it will be incredibly soft.



You can see after its been sitting in the fridge it adds a yellowish tint. This is most likely from the truffles.

I completely understand! I have three cats who are insanely spoiled and important to me. I have moved cross-country 4 times with them and will never ever leave them alone (with others feeding the, etc.) for more than 4 days. Animals are amazing.
That ice cream….I want to try it so badly!!!!!! Looks amazing.

There are a million recipes online for ice cream, and I used one I found on on the internet. FOODTV.COM has trustworthy ones, and the only difference for this truffle one is that you have to heat the milk with truffle shavings. Super easy.

My body seriously started to shiver as I read each line and moved from one picture to the next. Look at the texture of that truffle! Why isn’t there a thing where I can scratch a taste.
And what a happy coincidence, my sister JUST got the Cuisinart professional ice cream maker and I’ve been looking for recipes for the past few hours. I think I will try this! Where can I get whole truffles?

i just adopted a dog, cleo and i’m absolutely obsessed with her. that pic of rocky reminded me of when i was little and would feed my grandma’s german shepard vanilla ice cream. he loved it.

les truffes ont toujours été mon 1er choix au restaurant, je le mettais partout, en huile, sur les pâtes, le risotto!
et mon autre truc favorit: les glace ben&jerrys… si je peux mixer les deux, et avoir mon plaisir dans une glace, cool je devrais essayer!!

Holy shit, as usual. I really can’t think of any thing more indulgent than TRUFFLE ice cream. Isn’t it Kimora Lee Simmons who uses La Mer face cream on her whole body? Perhaps this treat might be indulgent/lavish/expensive enough for her. Alas, the rest of us can merely live vicariously through you – and Rocky. Nice work, my dear.

can you describe how this tastes? i’m super curious. i love truffles, but i’m so used to it in savory dishes, that i’m having a hard time imagining how it would taste as ice cream. it sounds super amazing though!

thanks for the info. hahahha i know jack shit about truffles. basically. my knowledge is limited to the following: they come in black or white, are usually “hunted” using pigs instead of dogs because dogs will eat them and pigs won’t… and most importantly that they taste amazing. especially on mcdonald’s french fries (okay..i’m going into hiding now. i can’t believe i just admitted that).

I had the best truffle risotto ever. Best risotto ever, even. Except the awful thing is that the chef got such bad eczesma on his hands (washing up and so on) that after a while his doctor banned him from cooking (ever again!)… it was awful! (He’d trained at Harry’s bar and all…)
Now I’m hungry again. that really does look delicious; I would have eaten mos of the creme anglaise and had to remake the whole batch though!
