On some weird avocado thing, but I love eating like this, especially at the studio when I need something quick and easy to clean. Always trying to find ways to eliminate delivery.
Tried different ways to season the avocado, first time just salt, second time replaced it with soy sauce. This is my favorite seasoning..Dijon mustard, soy sauce, a little salt..so amazing, better than Hummus I’d say.
The mustard is necessary, a must.
I used these italian toasts, they’re completed dried out like biscuits..Don’t want any soft texture for the bread because the avocado is so creamy.
Top with lots of red pepper flakes and an egg. I cooked the egg in water (after poking a hole in it) in the microwave for 8 minutes and let it cool for 8 minutes. Some microwaves will make your eggs explode. Not sure what the trick is.
