Monk’s Head Brunch

Now if you are tired of that same French Toast thing on a Sunday morning, you can also try some freshly shaved Monk’s head on mini butter rolls. With some fresh fruit too of course…and some very spicy Grand Marnier soaked apricots….
The only hang up about this cheese is that you will need a Girolle to shave it, but the flavor is very delicate. I found a Girolle here that is reasonably priced. I believe you can also find Monk’s head cheese on Amazon too if you do a quick search.

This cheese goes nicely with a sweeter spread, but you need something special, not just any kind of jam or marmalade. I suggest using dried apricots, soak them in some Grand Marnier, chop it, add some hot peppers, and boil it for a bit until it gets thick. For texture don’t use a food processor. Add some clove simple syrup if you wish.

To prep the cheese, it’s best when it’s freshly shaved you just work the blade around the cheese and you get these little tulip like formations.



Some bread and fresh fruit over ice.


Serve with that spicy apricot paste, yuzu infused honey, and mascarpone cheese..





The shavings look a bit more like carnations to me, but delicious none the less! That apricot spread is a very cool idea!

Also- If you ever visit Austin, TX, I highly recommend Elizabeth Street Cafe. Its an Asian and French inspired menu with unique menu items. And, they have a great brunch, but anytime is good! I think you’d like it. And, the decor is something out of a magazine. Surprisingly affordable too!
