Fresh Mozzarella Video

Quick Video of how to make Fresh Mozzarella Cheese. This video has music, so if you are viewing this at work, make sure to turn your speakers off before you play the video (if you play the video before you read my disclaimer don’t say I didn’t warn you!). To those of you who asked, the classical music in this video is actually played by me, I got some old recordings from recitals I played long time ago digitized into MP3 format. The piece is Toccata in E flat Minor by Aram Khachaturian. The gangsta rap sandwiched in between the two edited recordings is by MIMS “this is why I’m hot”.

You’ll need 1 gallon milk, 1 rennet tablet crushed, 1/2 cup bottled water (1/4 cup for rennet, 1/4 cup for citric acid), 2 tsp Citric Acid (divided, 1 dissolved in the water, 1 dry) 1/2 tsp salt.

    -Pour the milk into pot, let it come to 50 F. Mix 1 rennet tablet crushed into the water. Do the same with 1 tsp citric acid.
    -Pour in the dissolved citric acid when the milk is at 50 F, also add the dry citric acid and mix.
    -Heat the milk now to 88 F.
    -Turn off heat and add crushed Rennet. Stir the milk, cover the pot, and let it sit for 20-30 or until you get a tofu like formation. You shouldn’t touch it until you get a clean break.
    -Once you can get a clean break, cut the curd into 1/2 inch cubes. Let it sit there for 10 minutes. Reheat back to 108 and continue stirring until curds start to melt and shrink.
    Turn off heat and continue to stir until curds shrink.
    -Drain curds, let them sit there for about 15 minutes, then with a slotted spoon start grouping the curds so they start to form. Heat in microwave for about 15 seconds, drain the extra whey if there is any, add salt. Heat again for 15 seconds and see if you can start kneading the cheese, or stretching it. Form it into a ball. If you haven’t gotten something by now, you have to start over, heating it over and over again will only mess up the cheese more.

    I work with cheese quite a bit in Ireland as a cheesemonger and found this to be a great introduction into how to make fresh mozzerella. You should try smoked mozzerella if your ever making it again, its really simple extra step and you can introduce all sorts of flavors that way. (obviously theres millions of variations you can do by just changing the milk by adding things to it, chocolate milk was one of the maddest ones I heard the other week)
    Also just wondering what happens to your older posts, I’m really interested in the food ones. They seem to just disappear when you post a new one, those crisps that you made were really amazing reminded me of a garnish on very good chefs dish.

    no actually it is a really good question, the kind of milk that is best for this is unpasteurized milk. Its hard to find so I used regular whole milk from the store and it worked fine but I get the feeling unpasteurized milk would have worked A LOT better. Its the best for mozzarella apparently.

    It tastes more “organic” if that means anything. I can’t really explain the taste difference except that the store bought mozzarella tastes saltier. It does melt well, you can use it on pizza easily.
    1 gallon yields ONE ball which is why cheese is so fattening I guess.

    hmm you could possibly use the stove, just heat up the leftover whey liquid put in the cheese to melt it a bit instead of using the microwave. Dont use the oven tho.

    nope, don’t have time. I quit when was in highschool because I wanted to pursue a fine arts career and then I ended up doing fashion design because I didn’t know that the “fine artist” lifestyle was really for me. Doing fashion design and fine arts is almost the same kind of life, very difficult to make money/be successful. But there was no way I was going to end up being a pianist because I just hated it. Though now I wish I could still play.

    Fashion and music are an all or nothing thing unfortunately…at least that’s what i have found. I was playing trumpet full time and studying at a conservatorium, and now a year into studying fashion design i have played maybe 3 times? So of course I sound terrible and don’t want to play. I am finding studying fashion to be much more rewarding though, so not all is lost. I actually sleep these days as opposed to singing chord progressions in my head all night. I am glad you chose to pursue fashion, much more room for us to witness your creativity.

    Yea you are so right..all or nothing…So totally true I guess both are very similar in that way. Either you’re #1 or you’re “everyone else”. I also do have to make the connection here that those years of training for piano has actually helped me. Even though I did quit and sometimes I think of how much of a waste it is, training your fingers to play piano creates dexterity for the hands. I don’t think I’d be able to sew as well or do the food for this blog if I didn’t have the finger training. So much of what gets created for this blog involves me working directly with my hands and I know for sure the piano playing has given me more control over the way I work with my hands.

    Yes I have seen that film, We had to for a class in college and while I did fall asleep during the entirety of the film (I know, awful, but a sauna like classroom during the winter with the lights up will put anyone to sleep) but I do know the cinematography and shooting style was totally new for its time. While I am really flattered that you compared my measly video to his films, I feel like this video is kind of shoddy..there is huge room for improvement and I have seen some mind blowing work by other motion graphic artists…This was the first time I got my hands dirty in AfterEffects and an acquaintance of mine was actually nice enough to give me a quick tutorial before I started editing in it. I hope I can do more videos and get better at it…I prefer working with pictures cause its way easier.

    I love the video. It’s fantastic. Nice mix of creepy, crushing tablets, pouring milk, methodical like drug concoction. Perfect soundtrack; MIMs is a nice touch. I like the dancing in front of projector. I want one of those. You know, I hated piano training and like you, I stopped in high school. But I picked it back up in university and it changed my life.     And for those (like me) who may not know where to find citric acid, try a local homebrew supply shop. Took me HOURS to find the dang stuff!
