Crisp
I’ve always had a strange addiction to potato chips. The impulse usually clocks in conveniently when I’m in the mood to watch a marathon of SVU episodes. Olivia Benson with long hair please, not short. The beauty of indulging in a big bag of chips is in its mindless repetition. I thought it was about time that I take this mindless repetition and turn it into something more mindful.
Chip flavors are always powdered into an imitation of what the flavor is supposed to taste like. Sour cream and onion isn’t the same as tasting real sour cream and onions, (Though I suggest Baked Lays Sour Cream and Onion, my favorite chip). Sure, Imitation in itself has value. Just not all the time. I want confrontational flavors. Cilantro chips, maybe even vanilla flavored chips- I could try several different flavors and see which one I like most…





Newly acquired spiral shaver below. I use it for cucumbers so that I can wrap my sushi rolls with them, but I tried it with a potato, and it started shaving out a long sheet of potato……….You can see I am spinning the wheel so the potato feeds through the blade.


It sort of looks like tissue paper. I’m holding the spiral shaved sheet of one potato in the picture below.. Its pretty long..

This long sheet above now becomes 8 small sheets, uniform in size and visuals.

Flavors; Red pepper thread, prosciutto + red peppercorn, cilantro, and Vanilla. Mr. Adria is well known for his Vanilla whipped mashed potatoes. I thought I could try this vanilla flavor for potato chips…Gross? Maybe. I quite like it. I had never tried Vanilla under the savory context. My plan is to layer these ingredients in between two sheets, sort of like mummifying them or sandwiching them so they are “Trapped”.

So you can see in this image I just sandwiched the flavors in.

Baking rack. This is a waved baking rack made especially for baking french baguettes but I used it to create waves for the potatoes while baking them. This rack is also good because it has a perforated wall which lets the steam from the potato disappear, allowing for a crispier chip.
I noticed Cilantro had the most moisture. Next time I will dry my cilantro first.

Sprayed with PAM, and baked at 250 F for 40-50 minutes. Its more like dehydrating and baking at the same time.







You can see I have a very strange fixation with Vanilla and potatoes…



I think these chips are good for snacking while drinking alcohol… before a dinner party. You know, when everyone just starts to get to your place and the food’s not quite ready yet but people are eager to drink…I think the potato+prosciutto combo is better than serving Beef Jerky. Why do I sound like Ina Garten right now? I’m much too young to be talking like this and I don’t even like dinner parties..

do you…have a different level of brain status than the rest of the world? the amount of detail in your work, from the actual casing you put around your homemade chips, to the way you photograph and display them on your blog, scares the shit out of me, almost. it's too perfect, too good to be true. but in a positive way. you leave me with my jaw hanging wide open and my heart all a flutter with artistic thoughts.

Everyone always leaves comments on this website that their minds are being blown, etc. This just goes to show how diluted the mainstream has gotten. People can be this creative. I believe anyone can be. It's just that no one takes the time, has the care… so here in Luxirare, when someone does, it truly truly stands out. I've always wanted to ask stuff like, Luxirare… how did you get this way, what does your workspace look like, what job do you have, do special things fall upon you like gifts… but in reality, your life is probably normal like everyone else (or maybe it isn't). But the fact that you create this world is the important part.

I really wonder how long it takes for you to come up with your ideas. I'm sure some are fast forming, but from the moment you get your idea, how long does it usually take for you to carry it through to fruition? Weeks? Days? Hours? Do they pile up into a big jumble in your brain? I'm sure you must have a million brilliant ideas like this, but due to the amount of time each project takes, I'm sure you don't get to complete as many as you wish…or maybe you do? I can't imagine someone as creative as you forming these amazing ideas one at a time in a nice linear fashion where another doesn't form until the current is completed. Huh. Guess I will never know, but wow, to have your brain for a day…
every part of my being craves to be so imaginative, yet if one's brain were to display ideas of creativity in landscapes, mine would be a desolate desert, whereas yours would be a lush rain forest.

I am trying to say this in a way that's not derogatory but I feel that everything is so… unattainable and perfect.
I get frustrated because I can't make the food, or wear the clothes.
I guess (to me) the word 'soul'brings forth terms like warmth and comfort while LUXIRARE is very cold… everything is so scientific and exact (and perfectly labeled and shot in a bright light).
I don't know you personally and for all I know you could be the warmest person ever. I didn't mean to offend you, which I hope that I didn't.
It's like calling the most beautiful girl in school an 'Ice Queen'. It's both a compliment and a put-down.
You are undoubtedly the best in your niche and you present yourself very well – you have a large following. Which makes you 100x better as a blogger than the most of us.
I hope that I have explained myself somewhat, I guess I just wrote that based on a stomach feeling and forgot that it was out there for the whole world to see.

Hahah yea, I meant more of the episode quality when her hair was long as opposed to the later episodes when her hair gets shorter, not really the look of her hair itself.
I prefer the earlier SVU for some reason, the newer ones aren't even really "Sex" crimes so I'm always getting confused..

i tried your avocado crab salad thing last night.

these chips were first done by Ferran Adria at elBulli in 2000. Dish number 0630 in his catalog. The sandwiching technique is one of the first recipes in Thomas Keller's French Laundry cookbook. Just sayin'.

The El Bulli style of cooking your food is referencing is becoming very dated and out of favour. This is because it is not connected to eating or enjoyment of gastronomy. It's just showing off with flashy techniques appropriated from junk and convenience food.
You have not really spoken about how the food tastes or how it makes you feel.
If you want to look at food in an avant garde artistic way why not use inedible ingredients like futurist artist Filippo Tommaso Marinetti did in 1932 with his Futurist banquet.
Otherwise Heston Blumenthal makes the crazy looking experimental food but does it as a result of looking at the emotions and memories flavours and aromas can bring to the person eating.
You may have some fancy equipment but do you really understand flavour and food?

The chips look amazing, the flavor combos intriguing… but you don't say much about the taste/texture. Crisp? Savory? Everything you hoped or not quite up to snuff?Gotta try these at home. Minus the all-white outfit. The prosciutto flavor would be perfect for one of my favorite office breakfasts: raw milk latte and a bag of chips.
